Peanut Vegetable Stir-Fry
Try this yummy combination for a twist on stir-fry. This is a great way to use up leftover vegetables!
Makes 2 servings
Ingredients
- 2 cups of fresh or frozen mixed stir fry vegetables
- 1 tablespoon of canola oil
- 3 tablespoons of peanut butter
- 3 tablespoons of low-sodium soy sauce
- 2 tablespoons of unsweetened applesauce
- 1 teaspoon of cornstarch
- Pinch of red pepper flakes
- 1 cup brown rice, cooked (or you can substitute whole-grain pasta noodles)
Directions
- Cook rice according to directions.
- Heat oil in a skillet or wok on medium-high heat.
- Combine peanut butter, soy sauce, apple sauce, cornstarch, pepper flakes, and 2 tablespoons of water. Mix well.
- Add vegetables. Cook until tender.
- Mix in peanut sauce. Stir until vegetables are well coated. If peanut sauce is a too thick, add water. Add cornstarch if too much liquid.
- Serve over brown rice.

Ingredients
- 1 half of a whole wheat English muffin
- 1 tablespoon spaghetti sauce
- 1 tablespoon pineapple tidbits in own juice, drained
- 1 tablespoon reduced-fat mozzarella cheese, shredded
DIRECTIONS
- Toast muffin until very lightly browned.
- Preheat oven to 350° F
- Place toasted muffin on a baking sheet.
- Spread the spaghetti sauce onto the muffin half.
- Sprinkle the cheese.
- Place the pineapple tidbits on top of the cheese.
- Bake at 350° F for 4-6 minutes or until cheese melts and muffins are thoroughly heated.
- Hint: Replace English muffins with a whole wheat mini-bagel.
- Hint: Add other vegetables such as bell peppers or mushrooms.
- Hint: Replace spaghetti sauce with either peanut butter or low-fat plain yogurt. Top with fresh fruit or unsweetened applesauce.

DIRECTIONS
- Mix up plain water by adding slices of lemons, limes, oranges, grapefruit,
cantaloupe, cucumber or mint.
- For more intense flavor, allow to soak overnight. Experiment with different combinations.
- For extra fizz, use seltzer or club soda instead of plain water.
Use as seasoning for tacos, black bean burgers, beans & rice, or whatever else you want to give flavor!

- 3 tablespoons paprika
- 3 tablespoons. ground cumin
- 1 tablespoon oregano
- 1 tablespoon ground black pepper
- 1 teaspoon cayenne pepper (more if you want really spicy)
Directions
- Combine all ingredients & store in a plastic container.
- Hint: Add 2-3 tbsp. of this homemade taco seasoning per pound of meat to make flavorful tacos without all the added salt found in the pouches from the grocery store.
- Hint: Try substituting ground turkey for ground beef in any of your favorite recipes as an easy way to reduce the amount of fat!
