Chipotle Bean Dip
A delicious dip or spread to kick up your vegetable!
Serves 6
Ingredients
1 tablespoon of olive oil
1 teaspoon of garlic powder
1 can of drained and rinsed cannellini beans
1 tablespoon of chipotle peppers in adobo sauce (Freeze any leftover sauce.)
Directions
Put beans in a bowl and mash.
Add remaining ingredients. For a more intense flavor, add more chipotle peppers.
Hint:
Great as a vegetable dip, or spread in a whole wheat wrap with lettuce or shredded carrots
Are those bananas too soft and ripe? Mix them up in this delight!
Make 4 small pancakes
INGREDIENTS
1 Over ripe banana
1 egg
¼ teaspoons baking powder
Dash of cinnamon
Dash of vanilla
Directions
Mash the banana until smooth.
Stir in the rest of the ingredients.
Heat an oiled frying pan to medium high heat.
Make a small pancake with two spoonfuls of batter for each pancake.
Flip the pancake when the edges are golden brown.
Hint:
Warm up fruit and spoon over the pancakes! Peanut butter makes a great topping, too!
Warm-up your tummy with a delicious and easy breakfast!
Makes 2 servings | Serving Size: 1 cup
Ingredients
1 cup of 100% apple juice
1 cup of old-fashioned plain oats
1/2 teaspoon of cinnamon
1/4 diced apple
Directions
Add all ingredients to a microwave-safe bowl.
Microwave on high for 2–2 1/2 minutes.
Hint:
Consider topping with nuts or raisins.
