Chipotle Bean Dip

A delicious dip or spread to kick up your vegetable!

Serves 6

Ingredients

  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 can of drained and rinsed cannellini beans
  • 1 tablespoon of chipotle peppers in adobo sauce (Freeze any leftover sauce.)

Directions

  1. Put beans in a bowl and mash.
  2. Add remaining ingredients. For a more intense flavor, add more chipotle peppers.
  3. Hint: Great as a vegetable dip, or spread in a whole wheat wrap with lettuce or shredded carrots

Are those bananas too soft and ripe? Mix them up in this delight!

Make 4 small pancakes

INGREDIENTS

  • 1 Over ripe banana
  • 1 egg
  • ¼ teaspoons baking powder
  • Dash of cinnamon
  • Dash of vanilla

Directions

  1. Mash the banana until smooth.
  2. Stir in the rest of the ingredients.
  3. Heat an oiled frying pan to medium high heat.
  4. Make a small pancake with two spoonfuls of batter for each pancake.
  5. Flip the pancake when the edges are golden brown.
  6. Hint: Warm up fruit and spoon over the pancakes! Peanut butter makes a great topping, too!

Makes 2 servings | Serving Size: 1 cup

Ingredients

  • 1 cup of 100% apple juice
  • 1 cup of old-fashioned plain oats
  • 1/2 teaspoon of cinnamon
  • 1/4 diced apple

Directions

  1. Add all ingredients to a microwave-safe bowl.
  2. Microwave on high for 2–2 1/2 minutes.
  3. Hint: Consider topping with nuts or raisins.
