Sweet Potato Hash
Fall into this delicious dish with local sweet potatoes!
Ingredients
2 tbsp. olive oil
1 large apple, peeled and sliced into thin sticks
½ cup onion, thinly sliced
3 medium sweet potatoes, cut into thin sticks
Cinnamon to taste
Salt and pepper to taste
Directions
In a large bowl, mix together apples, onions, and sweet potatoes.
In a large skillet, heat 1 tsp. olive oil over medium-high heat.
Spread potato mixture in the pan in an even layer, pressing down lightly with a spatula.
Cook for about 5 minutes, or until golden brown.
Flip and cook for an additional 3-5 minutes.
Add cinnamon, salt, and pepper to taste. Then enjoy!
Hint:
Enjoy sweet potato hash as a side dish at breakfast, lunch, or dinner!
Hint:
To add spice, add garlic, chili powder, cumin, or paprika instead of cinnamon!
This is a great seasoning for roasted vegetables and more!
Ingredients
1 Tablespoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne powder
1 teaspoon black pepper
1 teaspoon basil
1 teaspoon sage
½ teaspoon thyme
¼ teaspoon salt (optional)
Directions
Mix together and storage in a plastic container.
Hint:
You can make a larger batch of this mixture and store it in an airtight container for use any time!
Your kids can help make this delicious snack! Great for car rides, after school or practice!
Ingredients
6-7 cups of your favorite snacks (whole-grain cereal, plain popcorn, pretzels, nuts, seeds, etc.)
2 tbsp. olive or canola oil
¼ cup Italian seasoning
1 tbsp. garlic powder
1 tbsp. onion powder
Directions
Heat oven to 325 degrees F.
In a 2-gallon resealable plastic bag, mix cereals & popcorn.
Drizzle with oil. Seal bag & shake. Add seasonings & shake well.
Pour in ungreased pan. Bake 15 minutes, stirring after 10 minutes.
Cool & enjoy! Store in airtight containers.
Hint:
Simple snack mixes make healthy snacking easy & fun! Pack about a ½ cup of snack mix into single-serve snack bags for a great grab-and-go snack!

Be creative & try any combination of ingredients like raisins, apricots, unsweetened coconut, dried plums, & the ingredients above!
